Instructions Instructions: *********************** thanksgiving 2003 very good served with vanilla ice cream *********************** for topping 3 tb unsalted butter 1/2 c packed light brown sugar 1 lb granny smith apples, peeled, cored, cut in to thin wedges for biscuit cake 1 c all purpose flower 1/4 c granulated sugar 1 t baking powder 1/2 t baking soda 1/2 t salt 1/2 t cinnamon 5 tb cold unsalted butter cut in small cubes 1/2 c well shaken buttermilk preheat5 oven to 425 make topping heat butter in10 " heavy skillet cast iron if available heat till foam subsides stir in brown sugar and remove from heat spread mixture evenly and arrange apples overlapping make cake blend flour, sugar, baking powder, baking soda, salt and cinnamon in food processor add butter and pulse until mixture resemble course meal transfer to bowl and add buttermilk stirring until mixture is moistened drop batter on apples and gently spread leaving 1" border for expansion bake in middle of oven about 25-30 minutes until golden brown and firm to touch remove from oven and cool on rack for 3 minutes then invert on to platter Notes: ********** RECIPE ENDS ******** This recipe published with BigOven, and can be imported instantly by BigOven users.
