Instructions Instructions: *** 5-14-06 very good for mothers day *** 24 medium shrimp (about 1 lb), shelled and deveined 1/3 c prepared balsamic vinaigrette 24 toothpicks 12 slices bacon 24 pickled jalapeno slices 1/2 c mayo 1 tb chili sauce 1 tb sweet pickle relish 1 tb minced sweet red pepper place shrimp and vinaigrette in resealable plastic bag, refrigerate for 15 minutes soak toothpicks in water microwave bacon for 1 minute on high ( this needs more time!) cut slices in half crosswise ( for 24 pieces) heat broiler remove shrimp from marinade, reserving marinade put 1 piece of bacon on work surface place shrimp at end put jalapeno slice in to curl of shrimp roll bacon up tightly and secure with toothpick repeat 24 times stir together mayo, chili sauce, relish and red pepper, add 1 tb water, cover sauce and refrigerate until serving place rolls on broiler pan and brush with marinade broil 3 minutes turn and brush with marinade broil 2 more minutes (i needed more time under broiler) serve with sauce Notes: ********** RECIPE ENDS ******** This recipe published with BigOven, and can be imported instantly by BigOven users.
