Instructions *** many times, always good *** 1/4 c butter 1 c minced onion 2 c pkgd cornbread stuffing mix 1 1/2 c pecans coarsely chopped 1/2 c chopped parsley 1 egg 2 tb prepared mustard 6-7 lb boned rolled ham 1/2 c honey 2 tb frozen oj concentrate heat butter in large skillet add onion saute 2-3 minutes combine stuffing mix, pecans and parsley in lg bowl add onion beat egg and mustard together stir into stuffing mixture and mix well heat oven to 325 remove cylinder of meat lengthwise from center of ham using long narrow knifw, leave about 2" shell cut i/2 inch form ends of cylinders to use as plugs fill cavity with stuffing and insert plug pieces secure plugs with skewers place ham on rack in shallow pan bake 1 hr stir honey and oj in small saucepan over low heat until well blended and warm brush ham with mixture bake another 30 minutes serve may use excess stuffing to make baked stuffed onions to serve with this Notes: This recipe published with BigOven, and can be imported instantly by BigOven users.
