Instructions Instructions: *** 5-8-06 second time we had this the clipping said 4* great!, this time i thought it was ok *** 1 1/2 # chicken cutlets (4 beasts cut in half) flour 1 cup mushrooms sliced 1/4 # bacon 1 tsp arrowroot disolved in 2 tb cold water 1 tb olive oil 3 garlic cloves minced 1 c beef broth 1/2 c red wine 1/2 c balsamic vinegar 1/4 c canned tomatoes chopped parsley season chicken with pepper, dredge with flour, shake off excess cook bacon till crisp, remove from pan and dice brown chicken in bacon fat (20 min) transfer to plate brown mushrooms in same pan (10 min) remove to bowl wash pan add oil and saute garlic add broth, wine, vinegar and boil 4 minutes stir and add in tomatoes add chicken simmer 10-15 minutes stir in mushrooms remove to plate decorate with parsley and bacon bits serve with rice Notes: ********** RECIPE ENDS ******** This recipe published with BigOven, and can be imported instantly by BigOven users.
