Instructions Instructions: *** 3-19-07 very good, lots of pans though *** 1/2 c unsalted butter 2/3 c snipped fresh chives 1/2 c thin sliced white onion 1/2 c thin sliced red onion 1/2 c thin sliced leeks (i used scallions) 3 lg shallots thin sliced 2 t minced garlic 1/4 c sherry wine vinegar 1/2 c whipping cream salt and pepper 2 6oz pieces calfs liver 2 plum tomatoes halved melt 1/2 the butter in heavy lg skillet over med heat add chives onions leeks shallots and garlic cook until leeks are almost tender about 12 minutes add vinegar and stir until almost no liquid remains increase heat to high add cream and boil until reduced to thick sauce stiring constantly season onion marmalade with salt and pepper remove from heat preheat broiler melt remaining butter in another heavy large skillet over medium high heat add liver and cook 3 minutes per side for medium rare meanwhile arrange tomatoes cut side down on baking sheet broil until skins begin to blister about 3 minutes turn over broil till heated through about 2 minutes rewarm onion marmalade over low heat divide liver between plates spoon marmalade on side garnish with tomato Notes: This recipe published with BigOven, and can be imported instantly by BigOven users.
