1 pd andouille sausage sliced
1/2 cup smokey ham cubed
6 ea scallions sliced
3 ea onions diced
4 clove garlic diced
4 stalk celery diced
1 ea green pepper diced
2 cup rice long grain whire
2 ea tomatoes quartered
1 tablespoon salt
1 ea bay leaf
1 teaspoon thyme
1 teaspoon cayenne pepper
1 teaspoon basil
1/2 teaspoon black pepper
1/2 teaspoon white pepper
1 teaspoon paprika
1/2 teaspoon oregano
2 1/2cup v8 juice
1 pd shrimp raw peeled and deveined

11-7-2012 not very good, tried making it with some lo turkey and shrimp but way too spicy so cut back on the cayenne!!!

we used cut up boneless skinless chicken breasts and didn't have any
white pepper, was very good, can also be made as a brown jambalaya by
omitting the tomatoes, paprika and v8 and using chicken broth as the
liquid.

pour off excess fat
sautee scallions, onion and garlic
add rice, tomatos, spices, and liquid and ham
bring to simmer
in 10 minutes place shrimp on top of rice mixture and cover
when cooked in 12 minutes add scallion tops as garnish
