Instructions *** 1-29-2012 excellent and pretty easy.....;about the tumeric, we had some, a can, pretty full, a can!, yes hmmmm, it cost 55 cents, so we shopped and a new jar was 5.00, so we decided to use the 55 cent version as we obviously don't use very much of this stuff and , heck, it still had some smell to it, and actually the rice was good!! *** 1 t hot paprika (i used 1/2 t smoked paprika, 1/2 t chili powder) 1/2 t salt 1/4 t cayenne pepper 1 tb olive oil (i used more) 4 thinly sliced chicken breast halves 1/4 cup dry white wine 1 can (14 oz) stewed tomato 2 roasted red peppers ( i used a jar drained), chopped 1/4 cup sliced stuffed green olives drained ( i also added 20 whole ones, they were small) 1/4 cup chopped parsley yellow rice for serving 30 minutes combine spices in small bowl and set aside heat oil in large dutch oven when hot, add chicken sprinkle 1/2 spices on chicken lightly brown chicken (about 4 minutes) turn chicken and season with remaining spice mix cook 3 minutes deglaze pan with wine scrape pan to include and brown bits add tomatoes with juice, red peppers and olives cover pot reduce heat cook 7 miutes till chicken is just cooked through if too dry add a little water yellow rice recipe 1 1/2 c water 1 tb butter 1/2 t salt 1/4 t ground tumeric 3/4 long grain rice bring water and everything but rice to a boil add rice reduce to simmer cover cook for 20 minutes uncover and fluff rice This recipe published with BigOven, and can be imported instantly by BigOven users.
