8 boneless skinless chicken thighs
1/4 c flour
1 can (14.5 oz) stewed tomatoes undrained
1 med carrot finely chopped
2 tb sun dried tomato vinaigrette dressing
1 t grated lemon peel
1 tb lemon juice
1 1/2 c white rice uncooked

coat chicken w flour
place chicken and remaining flour in crockpot or dutch oven
add remaining ingredients except rice-stir
cover
cook low for 6 -8 hours of simmer 4-5 in dutch oven
cook rice as directed
serve chicken and sauce over rice
