Measurement Description 4 ripe peaches 1 teaspoon lemon juice 3 cups (14 oz/420g) shredded cooked chicken breast 1/2 cup (3 oz/90g) drained, sliced water chestnuts or thinly sliced celery 2 green onions, thinly sliced 2 tablespoons peach preserves 2 tablespoons low-calorie mayonnaise 1 tablespoon balsamic vinegar 1/4 teaspoon sea salt 1/4 teaspoon freshly ground black pepper 1/4 teaspoon ground ginger Romaine lettuce leaves 1/4 cup (1 1/2 oz/45g) chopped walnuts, toasted Preparation Cook: under 30 minutes Blanch peaches in boiling water for 1 or 2 minutes - just long enough to loosen the skins. Remove from water and set on a plate. Peel and pit two peaches, and finely dice. Toss with lemon juice in a bowl to prevent browning. Add chicken, water chestnuts and green onion Stir together peach preserves, mayonnaise, vinegar, salt, white pepper and ginger; toss with chicken mixture. Arrange lettuce leaves in the center of a large plate. Top with the chicken salad. Thinly slice the remaining peaches and arrange around the chicken salad. Sprinkle with walnuts and serve.
