3/4 cup chopped pecans
1 cup water
1 1/4tsp salt divided
6 4oz skinless boneless chicken breasts
1 teaspoon black pepper
1/4 cup chopped shallots
8 ounces sliced mushrooms
4 cups cooked egg noodles
2 tablespoons chopped parsley


 
Instructions

Instructions:
toast pecans
process in food processor till smooth
add water and 3/4 tsp salt process till smooth
sprinkle chicken with salt and pepper
add oil to pan and saute chicken till done
remove chicken from pan and keep warm
cook noodles
add shallots and mushrooms to pan, cook till mushrooms tender
stir in pecan cream
bring to boil
cook 1 1/2 minutes
place 2/3 cup noodles on 6 platers
top with chicken and sauce
garnish with parsley
