Instructions *** 1-25-22 best i have made so far, pretty good and full of good fiber (you can tell) !! from a book joellyn read, cut recipe in half... *** 2 bunch greens 1/4 streak of lean or fatback of pork slices (i used 4 thick bacon slices) 2 15 oz cans chicken broth (i added some more) 3 cup cold water 1 t sugar 1/2 dried hot red pepper (i used red pepper flakes) 1 t apple cider vinegar (i used 2) salt and pepper to taste wash greens several times cut stems out (all the way) chop to small 1" or so cook bacon remove when brown place peork and greens in pot , cover with broth and water add sugar, red pepper, vinegar and salt and pepper cook in 6 qt pot for 1 hr (i cooked for 2) greens can be cooked 1 or 2 days ahead TOPPING 1 c chopped mild onion 1 green bell pepper chopped 1c apple ciider vinegar 4 rounds chopped jalapeno(i used the chopped jalapeno from a jar) mix well do not heat serve on top of collards This recipe published with BigOven, and can be imported instantly by BigOven users.
