1 cowboy steak, big thick 3" hunk with bone sticking out!

put some montreal seasoning on it
seal in bag
sous vide 24 hrs at 132
pat dry
put on screaming hot grill or grill pan to brown and line both sides
let rest a few minutes
cut the steak off bone and cut in half lengthwise
now you have 2 wonderful dinners
