Instructions Instructions: *** 10-28-2011 excellent *** 12-6-06 excellent *** Crispy Oven-Baked Fried Cod Fish #139991 recipe by KITTENCAL This is done half in a frypan and finished in the oven in very high heat to create an extra crispy coating on the fish. The complete recipe can be doubled. I most always serve this with fries. You will love this fish! 4 servings 20 minutes 10 mins prep 1 cup dry breadcrumbs 1 cup yellow cornmeal 1 teaspoon seasoning salt or salt 1/4 teaspoon cayenne pepper (can use a bit more if desired) 1/2 teaspoon garlic powder (optional) 4 (6 ounce) cod fish fillets, about 3/4-inch thick 2 large eggs, lightly beaten 6-7 tablespoons vegetable oil Set oven to 500 degrees. In a plastic zip-lock bag combine the bread crumbs, cornmeal, seasoning salt and cayenne and garlic powder (if using); shake to combine. Season fish with regular salt and pepper on both sides. Place fish in the bag (one at a time) and coat well with coating. Dip fish in eggs, then coat again with the crumb mixture. Transfer fish to a plate. Heat 3-4 tablespoons oil in an oven-proof skillet (preferably cast iron) over high heat until hot but not smoking. Proceed to fry the fish until golden brown (about 1 minute). Turn over and add in the remaining 3 tablespoons oil, and cook the fish another minute. Place the skillet in upper-third of the oven.
