Instructions Instructions: 4 yellow crookneck squash sliced 1/4 inch thick 4 med tomatoes sliced 1/4 inch thick 3 small eggplant sliced 1/4 inch thick 2 green onions minced 4 tb olive oil 2 tb wine vinegar 1 tb dijon mustard 1/2 t salt 1/2 t pepper in lightly oiled 1 qt shallow baking dish alternate vegetable slices sprinkle with green onions combine oil vinegar mustard salt pepper drizzle over vegetables bake at 400 for 30 minutes let cool 10 to 15 minutes top with parmesan cheese NOTE can be made without the eggplant reduce cook time to 15 minutes Notes: ********** RECIPE ENDS ******** This recipe published with BigOven, and can be imported instantly by BigOven users.
