Recipe by Rochelle Palermo Start to Finish: 30 minutes Servings: Makes 4 cheeseburgers Ingredients 1 onion, sliced 8 oz. sliced cremini mushrooms 2 cloves garlic, chopped 4 tbsp. olive oil 4 portobello mushrooms, stemmed 1 cup grated Gruyère 4 hamburger buns, toasted 1/2 cup Dijonnaise 2 cups arugula Preparation In skillet, cook onion, cremini, and garlic in 2 tbsp. oil over medium-high, stirring often, until browned, about 15 minutes; season. Brush portobellos with remaining 2 tbsp. oil. In grill pan, cook portobellos, stemside down, over medium-high for 5 minutes. Turn; top with cremini mixture, then cheese.
