Instructions Instructions: *** 09-06 good *** 2 lb pork shoulder or beef chuck in 3/4 " cubes flour 1/4 lb coarsely chopped bacon 2 lg onions in 1x1 chunks 2 green bell peppers or 4 poblanos roasted and peeled 2 bottles amber or dark beer 2 med cans tomatoes 3 tb ground red ancho or new mexican chilis 2 t ground cumin 2 t black pepper 6 cloves garlic smashed 1 tb ground coriander seed 2 t salt 2 t oregano 4 bay leaves 2 tb corn meal hot pepper sauce to taste 1 can black beans drained toppings in heavy stock pot fry bacon till crisp then remove (I added it back in later) dredge meat and fry till well browned when meat is half browned add onions chunk cooked pepper and add to mixture when meat is browned add remaining ingredients stir and coor 1 hour until meat is tender add beans and allow to heat through serve with various toppings of your choice Notes: ********** RECIPE ENDS ******** This recipe published with BigOven, and can be imported instantly by BigOven users.
