Instructions *** 10-23-2010 good *** July 7, 2010 Serves 4 3 tablespoons honey 1 1/2 tablespoons whole-grain mustard 1/3 cup cider vinegar Salt and pepper, to taste 2 tablespoons olive oil 1 shallot, sliced 1 pound green beans, trimmed 2 tablespoons chopped fresh parsley 1. In a small bowl, whisk together the honey, mustard, vinegar, salt, and pepper; set aside. 2. In a large skillet, heat the olive oil over medium heat. Add the shallot and cook, stirring often, for 2 minutes. 3. Add the green beans and cook, stirring often, for 1 minute. 4. Whisk the honey mixture again and pour it over the beans. Cook, tossing the beans occasionally so they cook evenly, for 3 minutes or until they are tender but still have some bite. 5. Sprinkle with parsley. Clara Silverstein.
