Instructions *** 8-27-15 very good, pretty easy *** prep 15 min cook 45 min serves 4 3 tb grainy dijon mustard 1 tb honey 1/4 c olive oil 4 skin on bone in chicken thrighs ( i used 6 boneless skinless) 1 t coarse salt 12 oz baby red potatoes (10) halved (i used baby white potatoes) 8 oz carrots peeled halved and cut lengthwise 2 small red onions cut into 8 wedges ( i used 1 large cut in to chunks) heat oven to 400 combine mustard honey 2 tb oil and rub all over thighs season with salt and pepper (i used more of this than recipe calls for) toss potatoes carrots onions with remaining 2 tb oil season with salt/pepper to taste place thighs, skin sides up on rimmed baking sheet and scatter veggies around them bake until veggies are caramelized (stir halfway through cooking time) and chicken reaches 165, about 45 minutes This recipe published with BigOven, and can be imported instantly by BigOven users.
