It is essential in this rub because it doesn’t burn as easily as granulated or brown sugar. A mixture of white, black, pink, and green peppercorns add complex flavors. 1/3 cup turbinado sugar ¼ cup kosher salt 3 tablespoons Spanish paprika 2 tablespoons chili powder ¾ teaspoon cumin seeds, freshly ground 1½ teaspoons mixed peppercorns, freshly ground 1½ teaspoons garlic granules 1 teaspoon onion granules ½ teaspoon chipotle powder 1. In a spice blender or regular blender, combine the sugar, salt, paprika, chili powder, cumin, peppercorns, garlic and onion granules, and chipotle powder. 2. Pulse to form a fine powder.
