Amount Measure Ingredient -- Preparation Method

1 Red Bell Pepper -- cut into thin strips
1 Yellow Bell Pepper -- cut into thin strips
1 Med Onion -- cut into thin wedges
1 Tbsp Garlic -- minced
2 1/2 Lbs Pork Roast -- cut into 1 1/2" cubes
2 Tbsp Olive Oil
14 1/2 Ozs Canned Tomatoes -- (preferably with roasted garlic)
1/2 cup Red Wine
1 tsp Fennel Seeds
1/2 tsp Dried Orange Peel
1/2 tsp Dried Rosemary -- crushed
1/4 tsp Red Pepper Flakes -- crushed
1/4 tsp Salt
1/8 tsp Pepper
3 Tbsp Flour
1/4 cup Water

Place peppers, onions, and garlic in crockpot. Pat pork dry. Brown in
batches
in olive oil until browned, stirring occasionally. Place in crockpot.
Add
tomatoes and wine to skillet. Bring to a boil overt medium heat,
deglazing. Pour
over contents of crockpot. Add remaining ingredients, except flour
and water,
to crockpot. Cook at low heat 7-9 hours or until pork is fork tender.
Whisk
together the flour and water. Whisk into liquid in slow cooker.
Increase heat to
high; cook 15 minutes or until thickened. Description: "Crockpot;
