Instructions Instructions: *** 1-11-09 good, easy, only used 2 apples ************************************************** jan 04 pretty good and easy ************************************************** 2 tb oil 1 4 to 5 lb roast (chuck or cross rib) salt and pepper 2 med onions, peeled, halved and thinly sliced 1/2 c cider vinegar 3 bay leaves 1 tb caraway seeds 1/4 c packed brown sugar 1/4 c chopped fresh marjorum or 2 tb dried 2 to 2 1/2 c beef broth 4 granny smiths quartered cored and peeled preheat oven to 300 in dutch oven heat oil and brown meat transfer meat to platter saute onions till translucent add vinegar and bring to boil scapping up stuff on bottom of pot so it is included put meat back in add bayleaves,caraway, brown sugar marjorus and enuf broth to come up halfway on the meat bring to simmer and put in oven after 2 hr 15 min add apples remove apples after 15 inutes check meat for tenderness (fork should slide out not stick in) when meat is done remove and let rest covered for 10 minutes thicken sauce if needed (should coat back of spoon) cut meat into thin slices and serve with apples and sauce Notes: This recipe published with BigOven, and can be imported instantly by BigOven users.
