Instructions *** 2-14-18 valentines day dinner, very good!! *** 2 lg purple eggplants 1 1/2 pd thin sliced chicken breasts 4-6 eggs whisked 2 cup seasoned flour 2 cup italian bread crumbs oil 1 cup grated parm 1 qt marinara sauce 2 cup grated mozzerella thinly slice the eggplants lay on paper towels and salt and let sit and then pat dry heat oil in lg heavy fry pan dip eggplant in flour, then egg wash cook until golden on each side remove and let drain on paper towels dip chicken breasts in flour, egg , and breadcrumbs add fresh oil as needed fry all chicken until golden and crisp in a casserole dish layer sauce, eggplant, parm, chicken...repeat as needed when done top with sauce and mozzerella cover with foil cook 1 hr at 350 remove and let rest for 15 minutes before serving..
