He topped his recipe with some Brooklyn Brine pickles, completing the delicious dish. He even went to the Brooklyn Brine Company himself to learn about the pickles. Ingredients 1/2 Pound Bacon (Diced) 1/2 Pound Ground Beef 1/2 Onion (Medium Dice) Pinch of Salt Burger Buns (Torn Up into Small Pieces) 6 Eggs 2 Cups Milk 2 Cups Cheddar Cheese Brooklyn Brine Hot Pickles (For Serving) 1. Start by tossing the burger buns in some olive oil and toasting them on a parchment paperlined baking sheet in the oven at 350 F until nice and toasted, about 10 minutes. 2. Meanwhile, bring a drizzle of olive oil to medium high heat in a pan. Cook the bacon until nicely crisp, with all the fat rendered off. Remove bacon, but keep the fat in the pan. 3. Cook the ground beef in the pan until nicely browned, stirring occasionally. When the beef is almost done, mash it down with a potato masher to really mash it into the pan. This will help the beef break down into nice, small pieces, and help it caramelize. 4. Add the onion and a pinch of salt and stir it around to mix it well. The fat should sweat the onion nicely. Cook until the onions are translucent. 5. Return to your bread pudding. Whisk together the eggs and milk in a bowl until it’s smooth. 6. In a separate bowl, stir together the burger buns, the bacon, the ground beef, onions, and the fat. 7. Take half the burger bun mixture and pour it into a large baking dish. Top it with 1 cup of the cheddar cheese. Top with the rest of the burger bun mixture, the rest of the cheddar cheese, and the milk and egg mixture. Push it down with your hands to tightly pack it all in and let it soak overnight. 8. Bake the casserole in the oven at 375 degrees until it’s nicely golden brown on top, about 30 to 45 minutes. 9.
