cook 1 chopped sweet onion and fennel bulb
in 2 T each butter and olive oil in lg skillet over medium heat, stirring occasionally until lightly caramelized, about 30 minutes

stir in 1/2 t chopped thyme, season with salt pepper

let cool

mix with 1 c sour cream, 1 T milk, 1 t white balsamic vinegar....season with salt and pepper to taste
