adopted from mario batali recipe from his restaurant babbo in NYNY, note also that the leftover oil can be used as a dressing (strain through paper towel) as it picks up the lemon flavor well but not the fish taste
1/4 cup capers, rinsed
2 1/2 lb scrod or halibut fillets
1 1/2 large lemons, thinly sliced
1/4 c flat leaf parsley
2 c extra virgin olive oil
pre heat oven to 250
chop half the capers
pat fish dry sprinkle fish with 1 1/2 t salt and 1/2 t pepper let stand for 10 minutes at room temp
arrange half the lemon slices in 8 inch square glass baking dish and arrange fish in 1 layer over lemon\top with all the capers, remaining lemon and 3 tb parsley pour oil over fish
bake in middle of oven, uncovered until fish just flakes and is cooked through, about 1 to 1 1/4 hours
serve fish with some of the lemon slices, capers and oil spooned over sprinkle with remaining parsley
