Pistachios give this chicken a crunchy crust that also happens to be gluten-free and protein-rich. Buh-bye, breadcrumbs!

pistachio crusted chicken breasts
total 30 minutes
2 cups shelled pistachios
1/4 cup white sesame seeds
4 boneless, skinless chicken breasts(or 4 pork loin boneless chops)
3 tb olive oil
1 cup plain Greek yogurt
2 teaspoons ground coriander
1 teaspoon lime zest
2 tb fresh lime juice
1/4 teaspoon cayenne
1 pkg 5 oz mixed greens
In food processor, pulse pistachios and sesame seeds; season with salt and pepper. Brush chicken with 1 tb oil olive oil and coat chicken with nut mixture, pressing in to mix so lots of nut mixture adheres.and transfer to a parchment-lined baking sheet. Bake at 400 degrees until cooked through, 20 minutes. In bowl, mix yogurt,coriander, lime zest, 1 tb lime juiceand cayenne. In large bowl toss the greens, remaining 2 tb oil and remaining 1 tb lime juice, season the salad.. Serve chicken with salad, chcken drizzled with sauce.
