Instructions Instructions: *** 1-11-07 good i added some dried basil and some dried italian seasoning ************************* 4-04 very good ********************** 1 sm eggplant 2 lb tomatoes chopped 2 t veg oil 1/4 t pepper 1 clove garlic minced 1 t fresh basil 1/2 c onion chopped 1 t olive oil 1 green pepper 1 1/2 lb zucchini peel and cut eggplant into 1 " slices place on paper towel salt cover with paper towel and put plate on top let stand 30 minutes to drain cut eggplant slices in to cubes put veg oil in skillet saute garlic and onion chop green pepper peel zucchini and cut in to 1/2 " slices combine everything drizzle olive oil over bring to boil cover and reduce heat simmer until tender (25-30 min) stirring occasionally servehot or cold Notes: This recipe published with BigOven, and can be imported instantly by BigOven users.
