from drumlin farm community based farming

6 med beets, scrubbed trimmed top cut to 1 inch
2 tart apples chopped
1/2 cup walnuts toasted
1/2 cup feta or goat cheese
1/2 cup flat leaf parsley
1 sm red onion thinly sliced
1/2 cup olive oil
1/4 cup balsamic vinegar
2 tb finly chopped shallots
1/2 t dijon mustard
salt and pepper to taste

wrap each beet in foil
bake on cookie sheet in 400 oven for 1 hour
cool
peel beets and cut in to cubes
mix beets, apples, walnuts, cheese, parsley, and onion
in small pan heat olive oil, add vinegar, shallot and mustard
whick while it simmers for 5 minutes
cool
dress salad, season to taste
