Instructions Oven Temp: Ingredients: 2 1/2 lb salmon fillet 4 tablespoon butter 2 tablespoon chopped parsley salt pepper 1 1/2 cups mayonnaise 3 tablespoon pesto sauce Instructions: *** 1-22-09 excellent, and i am not a big salmon fan *** 4-25-97 great *** Note this recipe was based on modifications made in 97, original is as follows make green mayonaise of 1 tb lemon juice 2-3 leaves spinach trimmed 2 tb fresh tarragon or 1 t dried 2 tb chives or tops of scallions 2 tb capers 1 1/2 c mayo make green mayo by tossing into blender or food processor above ingreditnts less mayo puree then mix in mayo serve green mayo along side of salmon or mix pesto sauce w/ mayo soften butter and mix in parsley brush on salmon salt and pepper salmon heat broiler put fish in broiler covered w/ butter sauce cook 10 minutes to the inch, turning once remove pour pan butter over fish serve with which ever sauce you have made serve with pesto/mayo sauce or green mayo served well with spanish rice and stewed tomatoes Notes: This recipe published with BigOven, and can be imported instantly by BigOven users.
