feb 2004 made this up for left over sausage very easy and tasty

4 italian sausages cut in to 1 " pieces (6 might even be better)
1 coursely chopped red pepper
1 coursely chollped green pepper
1 coursely chopped large onion
2 tb chopped garlic
salt
pepper
olive oil
1 1/2 tb italian seasoning
1 tb oregano
1 15 oz can diced tomatoes
parmesan cheese

heat oil in heavy skillet
add sausage and cook till brown
add rest of chopped vegetables and cook till soft
add seasonings
add tomatoes
heat till all is warm
serve topped with grated parmesan cheese
