Serve these with Cream of Three Tomato Soup. SERVES 2 ACTIVE TIME 15 min. TOTAL TIME 45 min. INGREDIENTS 1 Tbsp olive oil 1 onion, finely chopped ¼ tsp salt 4 thick slices bread Sriracha sauce, to taste 2/3 cup grated Cheddar cheese ½ cup butter, softened DIRECTIONS Heat oil in a cast-iron skillet over medium-high heat. Add onion and salt. Saute 3 minutes. Add 1 Tbsp water. Cover, reduce heat to low, and cook 40 minutes or until onion is golden-brown and very tender, adding more water as needed. Scrape onion into a small bowl; wipe out skillet Top 2 bread slices with Sriracha to taste. Spread caramelized onions over remaining 2 slices; top evenly with cheese. Place 1 slice on top of each. Heat skillet over medium-high heat. Spread 1 side of each sandwich with 2 Tbsp butter; place buttered-side-down in skillet. Cook 2-3 minutes or until golden brown. Spread top of each sandwich with remaining butter and turn. Cook 2-3 minutes or until second side is golden brown. KITCHEN COUNTER Serves 2.
