A classic manicotti recipe that is sure to make everyone happy!
Recipe type: Entree
Serves: 6-8

Ingredients

1lb Italian sausage
1½ pounds of ground beef
¾ cup of chopped onions
2 fresh chopped garlic cloves
28 ounce can of diced tomatoes
6 ounce can of tomato paste
1 Tablespoon of basil leaves
Pinch of salt
Pinch of pepper
8 ounce container of ricotta cheese
8 ounces of small curd cottage cheese
2 cups of shredded mozzarella cheese
1 cup of provolone cheese
1/3 cup of Parmesan cheese
One egg
1 teaspoon of parsley
1 teaspoon of Italian seasoning

Instructions

This is a THREE STEP PROCESS!!
First, brown ground beef and Italian sausage, drain the fat.
Combine onions, garlic, diced tomatoes, tomato paste, basil leaves, salt and pepper into a large skillet.
Simmer sauce for hour.
This can be done ahead if needed and stored in the refrigerator.
Second Step is to cook the noodles as directed on the package of manicotti.
Drain noodles and set aside to cool. You will have to handle the noodles so it’s best to let them cool completely.
Last step is to prepare the cheese stuffing.
Mix the following together: ricotta cheese, small curd cottage cheese, shredded mozzarella cheese, provolone cheese, Parmesan cheese, the egg and the parley and italian seasoning.
Stuff mixture into noodles.
Then get a baking pan. Put some sauce on the bottom. Place the noodles into the pan and then add more sauce on top.
Place in the oven at 350°F for 45 minutes
After 45 minutes take the mixture out I had mozzarella cheese on the top. (as seen below)
Cook for an additional 10 minutes
That stand for at least 15 minutes to cool
