EVOO 3 large tomatoes, cut into bite-size pieces 3 large peaches—halved, pitted, and sliced cracked black pepper torn fresh basil, for garnish balsamic vinegar, for drizzling Preparation In food processor, blend ricotta and 2 tbsp. oil; season. In bowl, toss tomatoes and peaches with remaining 2 tbsp. oil. Spread ricotta on plates; top with tomatoes and peaches. Top with black pepper and basil. Drizzle with vinegar.
