Instructions:
Thaw 1 lb smelts and rinse
Put some olive oil in platic bag, add smelts and shake to cover
In another bag put a cup of cornmeal and 2 tb cajun seasoning
Add smelts and shake
Arrance smelts on oiled roasting pan
Cook in preheated 400 oven for 20 minutes
Remove when brown and crispy!
Serve with lemon and tarter sauce.
