1-25-2012 very good, easy, makes a lot, add or subtract what sounds good

take large frypan with cover
add 1/3 cup oil
heat
add 1 bag oreida obrien potatoes
cover and cook 5 minutes and turn
cover and cook 4 minutes
sprinkle on 1 chopped onion
sprinkle on 4 slices chopped ham
sprinkle on 10 coarsely chopped mushrooms
spoon on nad spread 1 can corned beef hash
press down so all is fairly even
cook 5 minutes

sprinkle on 1 8 oz bag shredded cheese ( i used mexican mix)
break 8 eggs on top (not in 1 place!)
cover and cook till eggs are done
cut in to wedges and top with salsa
