Instructions Yields: 4 Servings I *** 8-18-15 very good *** cut eggplant into 1/2 inch slice and peel salt and let sit for 30 minutes, pat dry heat olive oil in oven proof skillet cook eggplant to brown, turning once light broiler remove eggplant add some chopped onions to pan and cook lightly add marinara sauce to pan add minced garlic and italian seasoning heat sauce add eggplant back in swirling to cover cover eggplant with parmesean cheese cover eggplant with shredded mozzerella top with italian bread crumbs or panko plece in broiler till lightly browned and cheese is melted serve as a side in separaate pan add lightly cooked cut up cauliflower top with sauce and cheese as above and cook as above This recipe published with BigOven, and can be imported instantly by BigOven users.
