Ingredients


 
Instructions
cook 2 cups quinoa with 4 cups water and let cool
add 1/2 cup lemon juice
add 1/2 cup olive oil
add 1 can chick peas drained
add 1 pkg mint stems removed and chopped finely
add 1 can diced tomatoes with green chilis drained
add 1 huge jar salsa, mild or medium

mix mix mix

optional-top with diced feta when serving

OR THE SMALLER VERSION
cook 1 cup tabouleh with 2 cuos water
bring to boil
cover and simmer for 10 minutes
let cool
add 1/4 cup lemon juice
add 1/4 cup olive oil
add 2 small cans chickpeas drained
add bunch of mint leaves, stems removed, chopped
add 1 small can diced tomatoes with chilis, drained
add 1 medium jar salsa, mild or medium, or hot if you want

mix mix mix optional tp with chopped feta
