roast a red pepper and dice
add to large bowl
add to bowl:
1/4 c olive oil
1/8 c balsamic vinegar
1/2 onion diced
1 small summer squash sliced (i used some that was cooked)
1 asian eggplant sliced crosswise
some garlic tops, diced (we had as leftovers)
some italian seasoning
some garlic or garlic powder
salt
pepper (fair amount)
stir and let sit for a while
cook in some oil in frypan till veggies are tender
