Instructions Instructions: *** 4-14-2012 very good, pretty easy *** 8-27-08 this started out as somthing else but wound up this way, very good, get a sort of crust on the chicken *** 1 large chicken breast italian bread crumbs salt and pepper lemon juice sliced lemon capers 1/2 stick butter combine bread crumbs and pepper in shallow dish cut chicken breast in half (short way) butterfly chicken (long way) pound chicken to 3/8" dredge chicken breat pieces in crumbs heat cast iron pan add butter and let heat add chicken and cook until WELL browned on both sides remove chicken to plates add capers and lemon juice to pan (stand back) stir and spoon pan contents over chicken breasts garnich with lemon slices Notes: This recipe published with BigOven, and can be imported instantly by BigOven users.
