*** 6-14-06 excellent *** 8 strips bacon 2 slices white bread crusts removed cut into 1/2 " pieces 1/4 c milk 1.5 lb 85% ground beef (85% is important) 1 t salt 1/2 t pepper 2 lg garlic cloves very finely minced oil for grill rack fry bacon until crisp spoon 3 tb of bacon fat into heatproof bowl and refrigerate till needed, use the bacon for other uses or as a burger topper place bread in small bowl and add milk, let sit for 5 minutes using fork mash bread and milk until it forms a smooth mixture break beef up into small pieces in a medium bowl season with salt and pepper add garlic, bread paste,and reserved bacon fat using fork or hands lightly knead together so ingredients are well incorporated and mixture is cohesive divide meat into 4 equal portions form into loose ball and gently flatten to 3/4" thick oil cooking grate cook over very hot fire until well seared, about 7 to 10 minutes Exported from Home Cookin 5.4 (www.mountain-software.com)
