*** 06-18-06 very good and easy *** Casseroles and salads you can share with pride From the kitchen of: Janet R., Kinderhook, New York 2 16-oz. cans white beans or 4 cups cooked 1 red onion, cut into thin slices 2 tbsp. parsley 1 small jar red caviar (about 4 tbsp.) DRESSING 6 tbsp. olive oil 2 tbsp. red wine vinegar 1 tbsp. Dijon mustard Drain beans in a colander and pour them into a large bowl. In a small bowl, prepare dressing by mixing oil, vinegar and mustard. Pour dressing over beans. Add onion, parsley and caviar. Toss and serve. TAKES HOW LONG TO MAKE: Less than 10 minutes to prepare DIFFICULTY RATING: 2 (1 to 10, where 1 = Practically boiling water and 10 = Takes years and Julia Child's help to perfect) COMMENTS: This salad is very tasty and even kids will like the saltiness of the caviar, which almost every supermarket sells.
